Roasted baby potatoes

1-1.5# baby or fingerling potatoes, cut into chunks or 1/2″ slices

2 tbs extra light olive oil

1 tsp (or to taste) season salt.

1 tsp dried parsley

Put all ingredients into a plastic bag, toss until well coated and mixed.  Dump on a cookie sheet in a single layer and bake in a preheated 400F oven for 20 minutes, stir to turn then return to oven to bake 10 minutes more or until fork tender.

Notes:

Baked on foil these potatoes get very crispy on the sides that touch the pan.  My husband remarked that they were like french fries and he was right!
