Easy chicken quesadillas

2 skinless, boneless chicken breasts

1 packet taco seasoning

1 small can diced chiles

1 tsp dried onion

2/3 c water

4 soft flour tortillas (low fat/low carb – Mission makes some great lf/lc tortillas)

1 c shredded cheddar cheese

Cook chicken either cut up and in a skillet with a touch of olive oil or baked until cooked through.  Chop finely or shred with a fork when cooked.  Simmer in skillet with remaining ingredients for approximately 15 minutes.    Lightly spray cookie sheet with cooking spray, lay two tortillas, side by side, on cookie sheet.  Spread chicken mixture in circle shape in center of tortillas.  Sprinkle lightly with shredded cheese, top with second tortilla, press lightly to spread meat mixture in center, sprinkle liberally with shredded cheese, repeat for second quesadilla.  Bake at 400F for 15-20 minutes or until edges are brown and crispy.
