Baked chicken dinner

Posted on March 5, 2007. Filed under: Chicken, Entrees, Recipes |

This is a tasty dinner of baked chicken breasts that will remind you heavily of Thanksgiving dinner at Mom’s!

2 boneless, skinless chicken breasts

1 tsp seasoned salt (i.e. Lawry’s)

2 tsp poultry seasoning

Rub breasts with salt and seasoning, set aside for 10 minutes to let flavors mix and absorb.

Bake at 325F for approximately 30 minutes or until center reaches 160F

Serve with a can of cranberry sauce, a side of your choice and whole wheat yeast rolls. You’ll think you’re having Thanksgiving dinner, I promise!

Notes:

I make an extra breast or two when I cook this. Refrigerated and sliced, the chicken makes a great sandwich meat. Spread a thin layer of mayo on some whole grain bread and add a bit of left over cranberry sauce and you’ve got a really excellent lunch!
