Really great hamburgers

1 lb ground, low-fat meat of your choice (lamb works especially well with this recipe)

1 egg

1 tbs garam masala

2 tbs dried cilantro

Mix ingredients together and form into patties.  Chill until firm.  Grill or cook as desired turning only once.  This is delicious with a bit of spicy mustard and mayo.  It’s also equally good unadorned either by bread or condiments.

Notes:

This recipe would also work well made into large, thin patties and planted in the middle of a pita.

Garam Masala is a Middle Eastern spice mixture used in nearly every dish.  It’s a wonderful general spice for savory dishes.  While you can buy this in chain grocery stores you’ll pay entirely too much and the quality will be quite low.  Indian groceries are the best places to get such mixtures, either that or make your own.  A large container can be had for under 3.00 at most Indian groceries.
