Trail Mix

Did you know you can make your own trail mix with better ingredients for a lot less than the pre-bagged stuff?  It’s tastier too.  There’s nothing I hate more than getting a bag of trail mix with stale nuts or rock hard fruit.  Yuck!

Roasted baby potatoes

1-1.5# baby or fingerling potatoes, cut into chunks or 1/2″ slices
2 tbs extra light olive oil

Baked chicken dinner

This is a tasty dinner of baked chicken breasts that will remind you heavily of Thanksgiving dinner at Mom’s!
2 boneless, skinless chicken breasts
1 tsp seasoned salt (i.e. Lawry’s)
2 tsp poultry seasoning
Rub breasts with salt and seasoning, set aside for 10 minutes to let flavors mix and absorb.

Easy chicken quesadillas

2 skinless, boneless chicken breasts
1 packet taco seasoning
1 small can diced chiles
1 tsp dried onion
2/3 c water
4 soft flour tortillas (low fat/low carb – Mission makes some great lf/lc tortillas)

Corn chowder

This is a great chowder to make in huge batches and freeze. It freezes fairly well and can also be kept in the fridge for a week or so and eaten off of. The first couple of batches I made were gone in mere days. We couldn’t get enough of it!

Really great hamburgers

1 lb ground, low-fat meat of your choice (lamb works especially well with this recipe)
1 egg
1 tbs garam masala
2 tbs dried cilantro
